8 Goose breast halves, skinned and trimmed
6 jalapenos, split and seeded
1 C. fat bacon
1 medium sweet onion, halved
1 Granny smith onion, cored and quartered
1 egg
1 C. bread crumbs
salt and pepper, to taste
1.Quarter onion and mince garlic.
2. Process goose, fat bacon, garlic, onion and jalapenos in grinder through a medium (7mm) plate.
3. In a large glass bowl, mix ground goose, egg, bread crumbs and salt and pepper until firm. Additional bread crumbs might be necessary; adjust until mixture can be formed into patties.
4. Cook patties on medium well-oiled grill to desired doneness; 4-5 minutes per side. Serve on toasted Kaiser buns.
