1-2 lbs. halibut steaks, 1" thick 1/3 C. white balsamic vinegar 2 T. EVOO 2 T. maple syrup 2 cloves garlic, pureed 3/4 t. salt 1/4 t. black pepper
In a medium bowl mix together all ingredients except halibut. Add halibut and marinate 1 hour in the refrigerator. Let fish sit at room temperature for 20 minutes prior to smoking. Preheat smoker to 350. Discard marinade and place fish on well-lubricated grill. Cook 25 minutes or until internal temperature reached 140.
