Cast Iron Apple Cobbler

Ingredients
6.75 oz all-purpose flour (about 1-1/2 C.), divided
12 C. thinly sliced peeled Fuji apple (about 4 lbs)
2/3 C. sugar, divided
2 T. butter, melted
2 t. vanilla extract
3/4 t. salt, divided
1/2 t. ground cinnamon
1/4 t. ground nutmeg
1/2 C. water
2 t. baking powder
1/4 C. chilled butter, cut into small pieces
1 C. low-fat buttermilk
Directions
Preheat oven to 375

Combine 2.25 oz (about 1/2 C.) flour, apple, 1/3 C. sugar, 2 T. butter, vanilla, 1/2 t. salt, cinnamon, and nutmeg in a large bowl; tossing well.  Spoon into a large cast-iron Dutch oven.  Add 1/2 C. water

Combine remaining 4.5 oz (about 1 C.) flour , remaining 1/3 C. sugar, remaining 1/4 t. salt, and baking powder in a medium bowl; cut in 1/4 C chilled butter with a pastry blender or 2 knives until mixture resembles coarse meal.  Add buttermilk; stir until just moist.  Drop batter by tablespoonful over apple mixture.  Bake at 375 for 1 hour or until bubbly and browned.  Serve warm.
