9 oz. all-purpose flour (about 2 C.)
1/2 t. baking soda
1/4 t. kosher salt
3-1/2 T. chilled butter, cut into small pieces
1/3 C. (1-1/2 oz) finely shredded cheddar cheese
2 applewood-smoked bacon slices, cooked and crumbled
3/4 C. nonfat buttermilk
1/4 C. water
cooking spray
Preheat oven to 400
Combine flour, baking soda, and salt in a large bowl; stir with a whisk. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Stir in cheese and bacon. Add milk and water, stirring until just moist. Drop dough by 2 level tablespoonfuls, 1 inch apart, onto a baking sheet coated with cooking spray.
Bake at 400 for 11 minutes or until golden brown.
