Ratatouille

Ingredients
5 medium-diced plum tomatoes
1 medium-diced, large eggplant
2 medium-diced, large red onions
2 seeded, medium-diced red bell peppers
2 seeded, medium-diced yellow bell peppers
1/2 C. EVOO
6 sliced cloves garlic
1 t. rosemary
1 t. thyme
1 t. basil
1 t. sea salt
1/2 t. freshly cracked black pepper
Directions
Combine all ingredients in casserole dish and bake at 350 for 30 minutes
