Sauteed Spinach and Garlic

Ingredients
2 T. Palm Fruit Oil
3 cloves garlic, very thinly sliced
1-1/4 lbs spinach, stems trimmed off, well washed, dried
Generous pinch red pepper flakes
1 t. sea salt
Freshly cracked black pepper, to taste
Directions
Heat the palm fruit oil and garlic over high heat until very hot, almost smoking.  Add the spinach and cook, stirring rapidly, for about 1-2 minutes, until spinach turns bright green and wilts slightly.  Remove the spinach from the heat.  

Add salt, pepper and red pepper flakes, and toss well to combine.  

Serve immediately
