Coconut-Allspice Steel Cut Oats with Protein Boost

Ingredients
3/4 C. water
1/4 C. quick-cooking gluten-free steel-cut oats
1/2 t. monk fruit extract
1/2 t. coconut extract
1/8 t. ground allspice
1/3 C. unsweetened coconut milk
1 scoop vanilla vegan protein powder 
1 T. unsweetened shredded coconut
Directions
Bring water to a boil in a small saucepan over medium-high heat.  Stir in the oats, monk fruit extract, coconut extract, and allspice.  Cover, reduce the heat to medium-low, and simmer, stirring often, until tender and the liquid has been absorbed, 5-7 minutes.

Meanwhile combine the coconut milk and protein powder in a small bowl, and stir until the powder has been dissolved.

Stir in the coconut milk mixture into the oats, add the shredded coconut, and serve immediately.
