3-1/2 C. cubed pitted apricots (about 1-1/4 lbs)
1/2 C. packed light brown sugar
1/2 C. chopped red onion
1/3 C. cider vinegar
1/4 C. golden raisins
2 T. honey
1 T. minced seeded serrano chili (1 small)
1/2 t. salt
1/2 t. mustard seeds
1/2 t. ground coriander
1/2 t. ground cumin
1/2 t. freshly ground black pepper
Combine all ingredients in a medium saucepan over medium-high heat; bring to a simmer, stirring constantly. Reduce heat, and simmer 15 minutes or until thick, stirring occasionally. Serve warm or at room temperature.
