1/4 C. minced red onion
1 T. sugar
1 T. finely chopped, seeded jalapeno pepper
2 t. cider vinegar
2 t. low-sodium soy sauce
1/2 t. salt
1/2 t. ground allspice
1/2 t. dried thyme
1/2 t. ground black pepper
1/4 t. ground red pepper
8 skinless, boneless chicken thighs (about 1-1/2 lbs)
cooking spray
Combine first 10 ingredients in bowl; add chicken, tossing to coat. Heat a grill pan or grill over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 4 minutes. Turn chicken over; cook 6 minutes or until done.
