3 T. coarsely ground black pepper 1 T. granulated white sugar 1 T. onion powder 2 t. mustard powder 2 t. garlic powder 2 t. american chili or ancho chili powder 1 t. chipotle or cayenne powder
Excellent for creating a rich, flavorful bark on brisket, beef ribs, etc. For brisket, salt 12 hours in advance in the refrigerator wrapped in plastic wrap. Mix ingredients and rub onto beef before smoking.
