6 medium chicken breast halves (boneless or bone-in) 1/2 C. ricotta cheese 1/2 C. fontina cheese or mozzarella cheese 1/3 C. grated Parmesan or Romano cheese 2 tsp. fresh basil (1/2 tsp dried) 1 tsp. fresh oregano (1/4 tsp. dried) 1/4 tsp. lemon pepper seasoning 1 tsp. olive oil or cooking oil
1. Combine all ingredients except chicken and oil to make stuffing. Place stuffing into the center of butterflied chicken and tie shut (or with bone-in, place under skin). 2. Brush with oil and bake in 375 degree oven for 45-55 minutes
