Steak and Spinach Pinwheels

Ingredients
8 slices bacon
1-1/2 lb. flank steak
10 oz. pkg. frozen spinach, defrosted
1/4 C. parmesan cheese
Directions
1. Cook bacon in skillet until done but not crisp.  Set aside on paper towels to drain.

2. Score steak on both sides, flatte with a mallet and season to taste.  Spread defrosted spinach over steak.  Lay bacon lengthwise over spinach and sprinkle with parmesan cheese.  Roll steak from shorter side and secure with skewers 1 inch apart.  Cut between the skewers and place on broiling pan.

3. Broil 8-10 minutes turning once.
