2 tsp. coarse ground pepper
1 tsp. garlic powder
1/2 tsp. rosemary
1/2 tsp. leaf thyme
1/2 tsp. oregano
1/2 tsp. poultry seasoning
1 Tbsp. olive oil
3 lb. eye of round beef, roast or boneless rin eye, rump or tenderloin
Garlice mayonaisse sauce:
1 tsp. lemon juice
1/2 tsp. garlic powder
1/2 tsp. oregano
In a small bowl, combine spices and mix well. Rub meat with olive oil and spices until well coated. Place roast on rack and bake at 500 degrees for 15 minutes. Reduce oven temperature to 350 degrees. Bake for an additional 45 minutes or until internal temperature reaches 130 degrees for rare.
For garlic mayonaise sauce combine all incredients, chill and serve with peppered beef
