3/4 lb. lean boneless pork
1 medium onion, chopped (1/2 C.)
1 Tbsp. cooking oil
3 C. frozen broccoli, cauliflower and carrots
4 oz. medium dried noodles or curly medium noodles (3 C.)
1 (10.75oz) can reduced-sodium condensed cream of celery soup
1 C. reduced-sodium chicken broth
3/4 C. water
1/2 tsp. dried marjoram or thyme, crushed
1/4 tsp. pepper
1. Trim fat from pork. Cut pork into thin bite-size strips. In a 12-inch skillet cook and stir pork and onion in hot oil over medium-high heat for 3-4 minutes or until pork is done.
2. Stir in frozen vegetables, noodles, soup, broth, water, marjoram or thyme and pepper. Bring to boiling. Reduce heat. Cover and simmer for 12-15 minutes or until noodles are tender, stirring occasionally.
