2 tsp. sugar
1 tsp. cornstarch
1/8 tsp. salt
1 C. orange juice
2 tsp. snipped fresh mint or 1/2 tsp. dried mint, crushed
1/2 C. mixed dried fruit bits
8 lamb chops, cut 1 inch thick
fresh mint (optional)
1. For sauce, in a small saucepan combine sugar, cornstarch and salt. Stir in orange juice. Cook and stir over medium heat until thickened and bubbly. Stir in mint. Cook and stir for 2 minutes more. Remove from heat. Remove 1/4 C. sauce and set aside. Stir fruit into remaining sauce; cover and keep warm.
2. Grill chops on an uncovered grill directly over medium coals for 12-15 minutes for medium-rare (145 degrees) or until desired doneness, turning chops once and brushing with the 1/4 C. sauce. Serve chops with the fruit sauce. Garnish with fresh mint.
