2 C. matzo farfel
2 C. cold water
2 medium onions, diced
1/4 C. oil
2 carrots, finely grated
2 stalks celery, diced
1 green pepper, diced
2 T. sugar
salt and pepper
2 medium potatoes, grated and well drained
4 eggs + 2 yolks, well beaten
1 T. parsley, finely chopped
1/3 C. oil
2 egg whites beaten stiff
1. Soak farfel in water 1 hour. Drain off excess water but don't press.
2. Saute onions in 1/4 C. oil. Add carrots, celery, green pepper, sugar, salt and pepper and saute until tender crisp. Cool
3. Add potatoes, eggs, parsley and farfel and 1/3 C. oil. Fold in egg whites.
4. Oil 9x13 pan and warm in oven
5. Add mixture and bake 375 degrees for 45 minutes
