Blintze Casserole

Ingredients
Batter:

4 eggs
2 T. sour cream
3/4 t. vanilla
1-2 T. sugar
1-1/2 C. milk
1/2 C. butter, melted
1-1/3 C. flour
1-1/4 t. baking powder

Filling:
2 pkgs. farmer cheese
15 oz. ricotta
2 eggs
2-3 T. sugar
1-1/2 - 2 T lemon juice
Directions
1. In processor combine ingredients for batter, process until smooth, scraping down sides
2. Measure out 1-1/2 C. batter and pour into buttered 9x13 inch pan.  Bake at 250 degrees for 10 minutes or until batter is set.
3. Combine filling ingredients and spread over set bottom layer.
4. Give remaining batter a brief stir, then slowly pour over cheese filling so the filling is completely covered.  Return to hot oven 35-40 minutes or until top is puffed and set.
5. Let rest 10-15 minutes before cutting into squares
6. Server with sour cream, yogurt or applesauce
