Cheese Blintzes

Ingredients
Batter:
1/2 C. cold water
1/2 C. potato starch
4 eggs 

Filling:
1 lb. farmer cheese
1 beaten egg
1/4 tsp. cinnamon
1/3 C. sugar
Directions
1. To make blintz, combine ingredients, adding eggs one at a time.  Pour small amount of batter into hot 8" fry pan.  Rotate batter to form a pancake and fry until it curls at the edges. Turn out on a cloth fried side up
2. Mix together ingredients for filling. Place a tablespoon of filling on bottom center of each pancake.  Fold in sides and roll.  Fry until browned on both side.
3. serve with sour cream and sour cream and strawberries
