Hamantashen

Ingredients
4 eggs
1-1/4 C. sugar
3 tsp. baking powder
5-1/2 C. flour
1 C. oil
2 tsp. vanilla
1/2 tsp. salt

Filling:  Lekvar prune butter, strawberry, apricot jam, etc
Directions
1. Beat eggs
2. Add oil, sugar, vanilla, baking powder and salt; continue beating
3. Add flour gradually, mix thoroughly
4. Remove from bowl and knead a few times until dough is smooth.  Divide dough into quarters and roll on lightly floured board to 1/4 inch thickness
5. Cut into 2-1/4 inch rounds
6. Place small amount of filling into each round.  Fold towards center on 3 sides, shaping into a triangle.  Pinch corners together.
7. Place on lightly greased sheet and bak at 350 degrees for about 15 minutes.  Cool on rack
