2-1/4 C. all-purpose flour 2-1/2 tsp. baking powder 1/2 tsp. salt 2/3 C. shortening 1 C. sugar 2 eggs 1 tsp vanilla extract 1 C. mashed ripe bananas (2-3)
1. In medium bowl, stir together flour, baking powder and salt. 2. In mixer, cream shortening until soft. Gradually beat in sugar until light and fluffy. Beat in eggs and vanilla. Add flour mixture alternately with mashed bananas; blend well after each addition. 3. Drop by tablespoon on an ungreased baking shset. 4. optionally, sprinkle with cinnamon, sugar, nuts or coconut. 5. Bake in 375 degree oven for about 12 minutes. Remove; cool on wire rack.
