4 egg 2 C. half-and-half cream 1 C. sugar 1 C. flaked coconut 1/2 C. all-purpose flour 2 T. butter or margarine, melted 1 t. vanilla extract 1/2 t. baking powder 1/4 t. salt dash nutmeg
1. Preheat oven to 325 degrees. Grease a 9-1/2x2 inch scalloped foil pie pan or 9-1/2x1-1/2 inch deep dish pie plate. Place on a cookie sheet. 2. In large bowl, combine all ingredients until well mixed. Pour into pie plate and bake 55-60 minutes or until toothpick inserted in center comes out clean. Makes 1 pie, 8 slices about 325 calories per slice
