Roast Crown of Pork

Ingredients
1/4 cup fresh lemon juice
2 cloves garlic -- peeled and minced
1 tablespoon finely chopped fresh sage leaves
1 tablespoon finely chopped fresh rosemary
1 teaspoon grated fresh ginger
12 juniper berries -- crushed
salt and freshly ground black pepper
1 crown roast of pork (about 10 pound size)
Directions
Preheat oven to 350F. Mix lemon juice, garlic, sage, rosemary, ginger, juniper berries, and salt and pepper to taste in a small bowl.

Rub meat with spice mixture, then place roast bone side down in a roasting pan. Cook 2 1/2-3 hours (15-18 minutes per pound), or until interior reaches 160F on a meat thermometer.
