1 (7oz.) bottle roasted red bell peppers
2 tsp. olive oil
1 Tbsp. fresh cilantro
1 tsp. fresh lime juice
1/2. tsp. salt, divided
4 (6 oz) skinless, boneless chicken breast halves
1/4 tsp. freshly ground black pepper
cooking spray
1. Prepare grill
2. Place roasted red bell peppers and next 3 ingredients into a blender or food processor; process until smooth. Stir in 1/4 tsp salt and set aside
3. Sprinkle chicken evenly with remaining 1/4 tsp. salt and black pepper. Place chicken on a grill rack coated with cooking spray over medium-high heat. Grill, covered, 5-6 minutes on each side until done.
4. While chicken grills, place red bell pepper sauce in a small saucepan, and cook over medium heat until warm. Serve with chicken
