6.75 oz. all-purpose flour
12 C. thinly sliced, peeled Fuji apples (about 4 lbs)
2/3 C. sugar, divided
2 T. butter, melted
2 t. vanilla extract
3/4 t. salt, divided
1/2 t. ground cinnamon
1/4 t. ground nutmeg
1/2 C. water
2 t. baking powder
1/4 C. chilled butter cut into small pieces
1 C. low-fat buttermilk
1. Preheat oven to 375
2. Combine 2.25 oz. flour, apple, 1/3 C. sugar, 2 T. butter, vanilla, 1/2 t. salt, cinnamon, and nutmeg in a large bowl, tossing well. Spoon into a large cast-iron Dutch oven. Add 1/2 C. water
3. Combine remaining 4.5 oz. flour, remaining 1/3 C. sugar, remaining 1/4 tsp. salt, and baking powder in a medium bowl; cut in 1/4 C. butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add buttermilk; stir until just moist. Drop batter by tablespoonful over apple mixture. Bake at 375 for 1 hour or until bubbly and browned.
