Step 1: Pie crust
1. Prepare Pie Crust dough (bottom only)
2. Combine the cheeses and add 1/4 cup of the cheese to the pastry dough
3. Chill dough briefly and press into a 10 inch pie dish
4. Place pie dish into refrigerator to chill while preparing the rest of the ingredients
5. Mix the remaining 1/4 cup of cheese with the breadcrumbs and set aside
6. Preheat oven to 450
Step 2: Filling
1. Cut zucchini into 1/4" slices
2. Drop zucchini into boiling salt water for about 5-6 minutes. Drain when finished
3. While zucchini is cooking, beat together the egg yolks and sour cream, then add the chives, flour, salt and pepper
4. Remember to remove the zucchini and drain.
5. Beat egg whites with the cream of tarter until stiff but not dry
6. Fold egg whites into the sour cream mixture
7. Arrange a layer of zucchini slices on bottom of the pie crust placing them edge to edge
8. Cover zucchini with small amount of the sour cream mixture
9. Repeat steps 7 and 8 making about 3 layers or until zucchini is used up
10. Sprinkle the reserved cheese and breadcrumb mixture over the quiche
11. Dot the top of the quiche with butter dots
12. Bake for 10 minutes at 450 then lower to 325 for another 40 minutes
