Italian Zucchini Casserole

Ingredients
2 1/2 Lb Zucchini
1/2 cup chopped onion
1/2 cup chopped green pepper
4 Tbs butter or margarine
1 3oz. can slice mushrooms drained
1 package spaghetti sauce mix
1 cup water
1 6oz. can tomato paste
1 cup shredded mozzarella cheese
2 Tbs grated Parmesan cheese
Directions
Serves 6 - 8

1.  Preheat oven to 350
2.  In large sauce pan cook the zucchini in salted water until crisp tender (4 - 5 min).  Drain well and set aside.
3.  In large sauce pan cook onion and green pepper in butter until tender but not brown
4.  Remove from heat and stir in mushrooms, dry sauce mix, water and tomato paste.  Mix well
5.  Gently stir in zucchini and cheese
6.  Pour into 10x6x2 baking dish or 1 1/2 qt shallow casserole dish
7.  Bake for 30 - 35 minutes

Optionally add browned meat or sausage to make this a main dish
