Zucchini Casserole

Ingredients
3 Large Zucchini
2 cups water
2 eggs 
1 cup mayonnaise
1/2 cup onion, chopped
1/4 cup red or green peppers
1 tsp salt
1/4 tsp fresh pepper
1 cup grated parmesan cheese
1 cup soft white bread (about 2 slices)
2 Tbs Butter or Margarine
Directions
Serves ?

1.  Preheat oven to 350
2.  Trim zucchini and cut into slices
3.  Cook in water in large sauce pan for about 5 minutes or until tender but crisp.  Drain well.
4.  While zucchini cooks, beat eggs until foamy in a large bowl; stir in mayonnaise, onion, pepper, salt and pepper.
5.  Add drained zucchini and Parmesan cheese and stir until well blended
6.  Pour mixture into a 1 1/2 quart casserole dish
7.  Sprinkle with breadcrumbs and dot with small pieces of butter
8.  Bake for 30 minutes or until golden brown
