1/2 C. egg substitute
1 can (4oz)chopped green chilies
1 C. crushed corn flakes
1 C. (4oz) shredded reduced-fat Mexican cheese blend
1/2 tsp. salt
1/4 tsp. cayenne pepper
1 pkg (1lb.) ground chicken
salsa, optional
1. In a large bowl, combine the first 6 ingredients. Crumble chicken over mixture and mix well. Shape into 1-in balls. Place on baking sheets coated with cooking spray.
2. Bake at 375 for 12-15 minutes or until golden brown, turning occasionally. Serve with salsa if desired
