Apricot glazed cornish hens

Ingredients
1/4 t salt
1/8 t cayenne pepper
1 cornish hen
1 T butter, melted and divided
2 T apricot preserves (I use sugar free)
1 1/2 t honey
1 1/2 t grated onion 
1/8 t ground nutmeg
Directions
1.  Combine salt and cayenne.  Rub 1/3 of the mixture inside the hen.  
2.  Brush half the butter over the outside of the hen and sprinkle the remaining salt/cayenne over the hen.
3.  Bake uncovered for 30 min @ 350 degrees
4.  In a small bowl mix the preserves, honey, onion, nutmeg and remaining butter.  It can be melted and mixed in the microwave or in a saucepan over stove.
5.  Brush over hens and cook for another 30-40 minutes until golden brown or temp reaches 160.  Remove from oven, cover and allow to sit for 5-10 minutes.
6.  Serve and enjoy.

Serves 1-2 depending on size of hens and appetite
