¼ cup butter, melted
3 Tblsp Dijon mustard
1 ½ Tblsp honey
¼ cup dry breadcrumbs
¼ cup chopped pecans
4 tsp chopped fresh parsley
4 (4 oz each) steelhead filets
1 lemon for garnish
salt and pepper to taste
Preheat oven to 400 degrees F (200 degrees C)
In a small bowl, stir together butter, mustard and honey. Set aside mixture.
In another bowl, mix together breadcrumbs, pecans and parsley.
Brush each steelhead filet lightly with honey mustard mixture, and sprinkle the top of the filets with the breadcrumb mixture.
Bake steelhead in preheated oven until it flakes easily with a fork, approximately 10 to 15 minutes.
