2 Lbs. Firm Tofu 1 large onion, diced 2 cloves garlic, minced 2 T. vegetable oil 4 C. cooked kidney beans 3 C. tomatoes 1-3 T. Chili Powder 1 t. cumin 1 T. vinegar 1 t. sweetener salt, to taste 1/4 t. black pepper Cayenne pepper, to taste Tabasco sauce, to taste
1. Press and crumble tofu 2. Saute onion and garlic in vegetable oil until onions are tender 3. Add tofu and saute a few minutes 4. Add all other ingredients and simmer 1 hour.
