Pot Roast with Fruit and Chipotle Sauce

Ingredients
3 lb. boneless beef chuck roast
2 t. garlic-pepper seasoning
1 (7 oz) pkg. dried fruit mix
1/2 C. water
1 T. finely chopped canned chipotle peppers in adobo sauce
1 T. cold water
2 t. cornstarch
Fresh cilantro sprigs (optional)
Directions
1. Trim fat from meat.  If necessary, cut meat to fit inside slow cooker.  Sprinkle both sides of meat with garlic-pepper seasoning.  Place meat in cooker.  Add fruit, 1/2 C. water and chipotle pepper.

2. Cover and cook on low-heat setting for 10-11 hours or on high-heat setting for 5 to 5-1/2 hours.  Transfer meat and fruit to a serving platter; thinly slice meat.  Cover meat and fruit; keep warm.

3. For sauce, pour cooking liquid into a bowl or glass measuring cup; skim off fat.  In a bowl, combine 1 T. cold water and cornstarch; stir into cooking liquid.  Cook in a medium saucepan over med heat until thickened and bubbly.  Cook and stir 2 minutes more.

4. Serve with meat and fruit sauce.  If desired, garnish with cilantro.
