2-1/2 to 3 lbs. boneless pork country-style ribs
salt
ground black pepper
1 (16 oz) can whole cranberry sauce
1 C. chopped onion
3 chipotle peppers in adobo sauce, finely chopped
1-1/2 t. minced garlic
1. Trim fat from ribs and sprinkle with salt and black pepper. Place ribs in slow cooker. For sauce, in med bowl combine cranberry sauce, onion, chipotle peppers and garlic. Pour sauce over ribs in slow cooker.
2. Cover and cook on low heat for 7-8 hours or on high-heat for 3-1/2 to 4 hours.
3. Transfer ribs to serving platter. Drizzle with sauce and serve with remaining sauce on side.
