Cumin Dusted Pork Cutlets with Citrus Pan Sauce

Ingredients
4 T. flour 
4 t. ground cumin 
1 t. salt 
1 t. black pepper 
¼ t. cayenne pepper
1-1/2 lb pork cutlets or fresh ham steak
3-1/2 T. EVOO, divided
3-4 garlic cloves, minced
1/2 C. orange juice
4 T. fresh lemon juice
Directions
Combine flour, cumin, salt, black pepper, cayenne pepper. Coat pork cutlets or fresh ham steaks in mixture.  Shake off excess.

Heat olive oil in large non-stick skillet over medium high heat. Add pork and sauté for about 3 minutes per side, until just barely cooked through. Don’t overcook! Transfer pork to serving plate, cover with foil to keep warm.

Add 2 tablespoons olive oil to skillet. Add garlic and sauté for 10 seconds. Add orange juice and lemon juice. Boil until slightly thickened (about 30 seconds). Pour sauce over pork and serve. 

*** Was a little too strong lemon flavor. Try reducing amount of lemon and may get more stars.  Even after reducing from 6 to 4T. lemons was still a little strong.
