4 T. Butter
6 T. Honey
1 t. pure vanilla extract
1/4 t. cinnamon
1/8 t. nutmeg
1/8 t. cloves
1/8 t. ginger
1/8 t. cayenne
6 C. whole Walnuts, Pecans, or preferred roasting nuts or mix
Pre-heat oven to 350.
Combine first 8 ingredients in a small saucepan and heat over low until butter is melted. Place nuts into a bowl and pour mixture over. Line a baking sheet with parchment paper (use two baking sheets if small). Pour nuts evenly over baking sheet. Bake for 15-20 minutes, turning once.
Remove from oven and cool completely.
** Do not use smaller pieces as they will not roast as evenly. If desired after cooling, break into smaller pieces.
