1 head garlic, roasted
1-1/2 C. all-purpose flour
1-1/2 C. semolina flour
3-4 large eggs
1/4 C. fresh parsley, finely chopped
water or EVOO, as needed
1. Smash roasted garlic in a bowl. Add eggs and parsley and mix until smooth.
2. Mound flour in a bowl and mix. Create a well in the center and add in egg mixture. Mix with a fork encorporating flour from the sides until able to mix by hand. Mix and kneed by hand until smooth, adding water, EVOO or flour as necessary. Let sit, covered by plastic wrap 20-30 minutes.
3. In small batches, run dough through a pasta maker and cut/shape as desired.
