Cod Piccata

Ingredients
1.5 lbs cod 
1/2 C. Almond flour 
1/2 t. Sea salt
1/2 t. chef shake seasoning 
5 T. Olive oil 
5 T. Grapeseed oil 
1 C. Chicken stock 
1/4 C. Lemon juice 
1/4 C. Brined capers 
1/4 C. Chopped fresh parsley 
Directions
1. Preheat oven to 400.

2. Rinse cod and pat dry.  Mix together flour, salt and chef shake in a bowl.  Dredge cod in flour mixture. 

3. Heat olive oil and 2 T. Grapeseed oil in a pan over medium heat in an oven proof pan. Brown cod for 3-4 minutes. Flip and place in oven until cooked through. 

4. Remove pan from oven.  Set cod on plate, cover and keep warm.  Set pan back over medium heat.   Add in broth, lemon juice and capers and use a metal spatula to deglaze the pan.  Reduce liquid in half then add remaining grapeseed oil and parsley.   Serve sauce over cod.
