Flying Olive Maple-Orange Granola

Ingredients
3-1/2 C. Old Fashioned Oats
1/4 C. brown sugar
1/4 - 1/2 t. salt
1/4 C. Maple Balsamic Vinegar
1/4 C. Blood Orange EVOO
1-1/2 T. water
1 t. vanilla
cooking spray
1/2 C. raw unsalted pepitas (pumpkin seeds) or sliced almond or sunflower seeds or a mixture
3/4 C. dried cranberries or other dried fruit of choice
Directions
Mix oats, brown sugar, and salt together in a large bowl.  In a small saucepan, combine the Maple Balsamic, Blood Orange EVOO, water and vanilla over low heat.  Stir until the syrup mixture comes to a boil; remove from heat.

Move the oven rack to the middle.  Turn oven on to 300 degrees.  Spray a cookie sheet with sides lightly with cooking spray.

Drizzle the syrup mixture into the oats while stirring.  Spread the mixture onto the cookie sheet and add the pepitas.  Place the mixture into the oven and bake for 30 minutes, stirring half way through.  Add the dried fruit and bake for 15 more minutes.  Remove from oven.  Cool and store in an airtight container.
