Blue Marlin steaks 3 T. butter 1/4 red onion or 1/2 shallot, chopped 1/4 C. white wine 2 limes, juiced 1 T. capers, drained
Salt and pepper Blue Marlin steaks to taste and spritz with some lime juice. Grill over medium-high heat until cooked to desired doneness. While blue marlin is cooking, saute onions/shallots in butter until soft. Add lime juice and wine, reduce by half. Add capers and continue reducing until little to no liquid remains. Serve on top of marlin.
