4 lamb loin chops, 1-in thick
1/4 C. apricot spreadable fruit
2 T. white wine vinegar
2 t. Dijon-style mustard
1/2 t. ground turmeric
1/2 t. minced garlic
1/8 t. cayenne pepper
1 T. grated fresh ginger
1 t. olive oil
1/4 t. salt
1. Trim fat from chops; set aside. In a small bowl, stir together apricot spreadable fruit, white wine vinegar, mustard, turmeric, garlic, and cayenne pepper. Set aside.
2. In another small bowl, stir together ginger, olive oil, and salt. Spoon ginger mixture evenly over chops; run in with your fingers.
3. Place chops on the rack of an uncovered grill directly over medium coals. Grill to desired doneness, turning once halfway through grilling and brushing with apricot mixture during the last 5 minutes of grilling.
